Oluwatoyin Sangokunle
"Say it in 6: "Pursue. Persevere. Patience. Peaceable. Positive." Oluwatoyin is pursuing his PhD in Nutrition and Food Science in Florida State's College of Human Sciences in hopes that his research will eventually help to make a global impact. His particular object of study is beans, in particular dry beans and the starch that they produce. Dry bean consumption is on the rise globally, and the nutritional components of dry beans gives them a particular capacity to be helpful in developing sustainable and affordable food on a world scale. At present, Oluwatoyin has isolated the starch from twenty different types of dry beans, and he is still counting! "
